RECIPE: Spicy steak fajitas

Quick and tasty, this easy Mexican dish is sure to become a family favourite

Serves: 4
Ingedients:
400g rump or sirloin steak, cooked rare
Olive oil
1 large onion, halved and sliced
1 red pepper, halved and sliced
2 cloves of garlic, sliced
10ml (2 tsp) ground cumin
10ml (2 tsp) ground coriander
5ml (1 tsp) dried chili flakes
Salt and freshly ground black pepper
A large handful fresh coriander, chopped
4 – 8 soft flour tortillas (or other flatbread)
Juice of 2 limes
Full-cream yoghurt
Method:
1. Thinly slice the steak. Set aside.
2. Heat a splash of olive oil in a large pan and fry the onion for a minute.
3. Add the red pepper and fry for 30 seconds.
4. Add garlic and spices and cook gently to soften.
5. Increase the heat, add steak strips and fry for three minutes, tossing to coat in spices.
6. Add fresh coriander and toss.
7. Spoon mixture into hot tortillas, add a squeeze of lime and a dollop of yoghurt and fold. Serve immediately.TUNE IN FOR MORE COOKING TIPS
