RECIPE: Chicken salad with figs and grapes

This chicken salad doesn't hold back on the fancy with its dottings of figs, grapes and parmesan

Serves: 6
Prep and cooking time: 40 minutes
Ingredients:
1 ready roasted chicken
45ml (3 tbsp) fresh lemon juice
60ml (4 tbsp) olive oil
Salt and freshly ground black pepper
3 baby cos lettuces, quartered
One handful of rocket
6 ripe figs, halved
1 bunch of red seedless grapes, halved
50g piece of parmesan cheese, shaved
Method:
1. Remove the meat from the chicken, discarding the bones, and shred into a bowl.
2. Add the lemon juice, olive oil and seasoning and toss to mix.
3. Arrange cos lettuce and rocket on a serving platter.
4. Top with the chicken, then a layer of figs, grapes and parmesan, and serve...
