RECIPE: Oaty choc chip cookie ice cream sandwiches

Turn freshly-baked biscuits into a sensational frozen dessert with the simple addition of a tub of ice cream

Makes: 12

Oat and choc chip cookies:

250g butter

200g (1 cup) light brown sugar

2 extra large eggs

5ml (1 tsp) vanilla essence

300g ( 2½ cups) flour

Pinch of salt

5ml (1 tsp) baking powder

5ml (1 tsp) bicarbonate of soda

125ml (½ cup) oats

250g chocolate chips

To serve:

1 litre ice cream, flavour of your choice

Method:

1. To make the cookies, cream together the butter and sugar using an electric mixture and beat till light and fluffy. Add eggs and vanilla and beat well.

2. Sift together flour, salt, baking powder and bicarb and add to the creamed mixture with the oats and chocolate chips. Mix well.

3. Divide the dough into 24 equal portions, about 35g each, and place balls on a greased baking tray, flattening slightly and leaving room to spread. Bake at 180°C for 10-12 minutes until golden in colour. Cool, then place on a cooling rack.

4. When cold, place a scoop of ice cream between two cookies and press together.
