RECIPE: Louisiana-style blackened chicken with red pepper salsa

Serves: 4
Ingredients:
1 large chicken
10ml (2 tsp) freshly ground black pepper
10ml (2 tsp) paprika
10ml (2 tsp) dehydrated onion flakes
5ml (1 tsp) dried oregano
5ml (1 tsp) dried thyme
5ml (1 tsp) smoked paprika
Pinch of cayenne pepper
30ml (2 tbsp) extra virgin olive oil
2 garlic cloves, crushed
Salt, to taste
½ lemon, zested
50g butter, melted
Red pepper salsa:
15ml (1 tbsp) extra virgin olive oil
½ red onion, finely chopped
1 garlic clove, crushed
200g cherry tomatoes, halved
100g char-grilled red pepper, chopped
15ml (1 tbsp) red wine vinegar
5ml (1 tsp) brown sugar
30ml (2 tbsp) finely chopped fresh coriander leaves
To serve:
Grilled corn on the cob
Lemon wedges
