RECIPE: Baked chicken with mushrooms & Parmesan
Serve this comforting casserole with pasta or mashed potatoes and seasonal vegetables

Method:
30ml (2 tbsp) olive oil
4 chicken breast fillets
3ml paprika
2 cloves of garlic, crushed
300g portabellini mushrooms
60g butter
15ml (1 tbsp) cake flour
250ml (1 cup) chicken stock
250ml (1 cup) cream
80g parmesan cheese, grated
½ bunch spinach, chopped
Freshly ground black pepper
10ml (2 tsp) lemon zest
30ml (2 tbsp) flat leaf parsley, chopped
