I remember my first braai experience well. It was at the neighbour's house and I was nine years old. I used to wash their car every Saturday. It was beef blade steaks with pap and a tomato and onion salsa.
A braai represents people to me. Whenever there's a gathering of people there's always a place for a braai. It completes the moment and everlasting memories are always created - with a couple of drinks of course!
Cooking over the coals is the most interactive way of entertaining and where I'm able to share ideas on what works best when braaing. As a chef I'm always asked by my guests for recipes.
I must have a Windhoek draught in my hand in order to braai.
The most unusual item I've ever cooked over the coals was a whole lamb, Asado style. It was very tricky, especially as it was a windy day on the beach and it took the whole day and was covered in sand! [Asado is a popular South American way of preparing meat on the fire for special occasions, where the meat is attached to a frame and cooked alongside the coals rather than over them. ]
