RECIPE | Cherry & coconut cereal bars

These homemade snack bars will go down a treat in your children's' lunchboxes

Makes: 10-12 bars
Ingredients:
250ml (1 cup) rolled oats
250ml (1 cup) crushed wholewheat flakes
160ml self-raising flour
150g dried cherries or cranberries
250ml (1 cup) coconut flakes
125g butter
80ml (cup) brown sugar
60ml (4 tbsp) runny honey
Method: Preheat the oven to 180ºC.
Combine the oats, wholewheat flakes, flour, cherries and coconut in a bowl.
Put the butter, sugar and honey into a pot over medium heat and, stirring continuously, heat until the mixture just comes to the boil.
Pour the butter over the dry ingredients and mix well.
Press into a 18cm x 23cm pan that has been lined with non-stick baking paper.
Bake for 20-25 minutes until golden and firm to the touch.
Cool completely in the pan before cutting into squares. Store in an airtight container...
