RECIPE | Vegan fruity, nutty bars

Grab one of these tasty health bars when you need a wholesome snack to munch on the go

Makes: 12-14 bars
Ingredients:
30ml (2 tbsp) ground flaxseed meal
60ml water
250ml (1 cup) pitted dates
250ml (1 cup) water
375ml ( cups) rolled oats
100g pecan nuts, half of them finely chopped and the other half roughly chopped
50g cashew nuts, roughly chopped
250ml (1 cup) mixed dried sulphur-free fruit, finely chopped (use cranberries, apricots, apples, pears and peaches)
30ml (2 tbsp) oat bran
Pinch of salt
5ml (1 tsp) ground cinnamon
45ml (3 tbsp) maple syrup
Method: Mix the flaxseed meal with the 60ml of water and set aside for 10 minutes.
Combine the dates and 250ml water in a pot and bring to a simmer. Remove from the heat and puree using a stick blender until smooth.
Combine the oats, nuts, fruit, oat bran, salt and cinnamon.
Add the flax mixture, date puree and maple syrup and mix until well blended.
Press into a 18cm x 23cm pan that has been lined with baking paper and bake at 180°C for about 30 minutes until firm to the touch.
Cool and cut into bars. Store in an airtight container...
