Serves: 4
Ingredients:
2 tbsp (30ml) sunflower oil
3 garlic cloves, crushed
2 tsp (10ml) curry powder
1 chilli, deseeded and finely chopped
1 tsp (5ml) mustard seeds
400g okra, washed and sliced into 1cm pieces
4 potatoes, peeled and cut into 2cm cubes
2 tomatoes, chopped
½ cup (125ml) vegetable stock
Pinch of sugar
Salt and pepper
Squeeze of lemon juice
15g fresh coriander, roughly chopped
Raita, to serve
4 rotis, to serve
Method:
- Heat oil in a saucepan and gently fry garlic, curry powder, chilli and mustard seeds for a few seconds over low heat. Be careful not to burn the garlic.
- Add okra, potatoes, tomatoes and sugar and sauté for a few minutes.
- Add vegetable stock and reduce heat to the lowest setting.
- Cook covered for about 15 minutes, or until okra and potatoes are tender.
- Season with salt and pepper, add a squeeze of lemon juice and garnish with freshly chopped coriander. Serve with rotis and raita.
