Serves: 4

Ingredients:

2 tbsp (30ml) sunflower oil

3 garlic cloves, crushed

2 tsp (10ml) curry powder

1 chilli, deseeded and finely chopped

1 tsp (5ml) mustard seeds

400g okra, washed and sliced into 1cm pieces

4 potatoes, peeled and cut into 2cm cubes

2 tomatoes, chopped

½ cup (125ml) vegetable stock

Pinch of sugar

Salt and pepper

Squeeze of lemon juice

15g fresh coriander, roughly chopped

Raita, to serve

4 rotis, to serve

Method:

  1. Heat oil in a saucepan and gently fry garlic, curry powder, chilli and mustard seeds for a few seconds over low heat. Be careful not to burn the garlic.
  2. Add okra, potatoes, tomatoes and sugar and sauté for a few minutes.
  3. Add vegetable stock and reduce heat to the lowest setting.
  4. Cook covered for about 15 minutes, or until okra and potatoes are tender.
  5. Season with salt and pepper, add a squeeze of lemon juice and garnish with freshly chopped coriander. Serve with rotis and raita.
