Cause and Effect, the experimental cocktail kitchen and brandy bar in Gardens, Cape Town, is known for serving creative cocktails made with ingredients that are 100% fresh and sustainably sourced.

They take their inspiration from the Cape’s fynbos, the ocean, its vineyards and mountains, which offer perfect places to forage for fresh ingredients.

Owner and creative director Kurt Schlechter shared one of their favourite summer cocktail recipes with us. The Drinkaterrium has unique local flavours, inspired by summer and local sustainable foraging.

The syrup is made from fennel picked around Cape Town, where it grows wild. Unfortunately, it is almost out of season, so get cracking on this recipe before it’s too late!

Ingredients:

25 ml Botanist gin

25 ml wild fennel infused simple syrup

15 ml Caperitif

15mls L’Ormarins - Litchi (Eau De Vie)

15mls lemon juice

Method:

  1. Over ice, pour together
  2. Shake well in a shaker, top with sparkling water and serve with jasmine tea-smoke on the side.
