This dish is a take on the classic French fish stew bourride, which could be considered a cousin of bouillabaisse

"Bourride is a traditional French stew made from a mixture of various types of white fish and stock. I have changed the recipe slightly to make a rich soup, using all the elements of a classic bourride, that I pour around a crispy-skinned salmon fillet," says chef and cookbook author Marlene van der Westhuizen.
