Ingredients:
4 litres water
150g lemongrass, chopped
250g fresh ginger, chopped
625g sugar
Juice and zest of 2 lemons
1 x 10g sachet yeast
1 ripe pineapple, peeled and cut into squares
Method:
- Bring 1l of water to the boil
- Add lemongrass, ginger and sugar and allow the sugar to dissolve.
- Add the rest of the water, lemon juice and zest, and cool before adding the yeast.
- Rest for 10-12 hours, strain the ginger beer and refrigerate.
- Add the fresh pineapple before serving cold with ice.
Cook's tip: Add fresh slices of ginger at the end for another dimension.
