Serves: 6-8
Ingredients:
1 small red cabbage , sliced
1 medium green cabbage, sliced
2 large carrots, cut julienne style
1 red pepper, cored and cut into thin strips
1 small red onion, thinly sliced
4 spring onions, finely sliced on the diagonal
Topping:
A handful of roasted peanuts
Fresh chilli slices
Dressing:
125ml (½ cup) vegetable oil
100ml vinegar
15ml (1 tbsp) water
1 - 2 cloves of garlic, crushed
15ml (1 tbsp) grated fresh ginger
1 red chilli, seeded and finely sliced, optional
15ml (1 tbsp) brown sugar or honey
10ml (2 tsp) soy sauce
Dash of finely ground black pepper
Method:
- Combine the red and green cabbage in a large bowl.
- Add the carrot, pepper, red onion and spring onions, saving some spring onion for garnish.
- Combine all the ingredients for the salad dressing in a bottle with a lid. Shake to mix well.
- Pour the dressing over the salad and toss to mix through.
- Garnish the with peanuts, chillies and reserved spring onion and serve.
