Got eggs and chocolate? That’s all you need to make this rich chocolate cake

Serves: 4

Difficulty: Easy

Ingredients:

180g chocolate (we recommend a mix of 100g dark chocolate and 80g milk chocolate)

4 eggs, separated

Method:

1) Preheat the oven to 170°C.

2) Line and grease a 20cm cake tin.

3) Melt the chocolate in a double boiler.

4) Beat the egg whites until stiff.

5) Add the egg yolks to the melted chocolate and whisk.

6) Add a third of the egg whites to the chocolate mixture and whisk until smooth.

7) Add another third of the egg whites to the chocolate mixture and fold them in. Add the last third of the egg whites and fold them in.

8) Pour the batter into the prepared cake tin and bake for 35 – 40 minutes.

9) Allow the cake to cool in the tin for 10 minutes, then remove and allow to cool completely.

10) Dust with icing sugar and serve with fresh berries.
