Quick & creamy cauliflower mash

Paediatric dietician Kath Megaw shares her recipe for a tasty cauliflower mash, which makes a great accompaniment to any low-carb meal Serves: 4-6Ingredients:1 cauliflower30ml (2 tbsp) butter30ml (2 tbsp) cream, optionalSalt and milled pepper, to tasteA pinch of grated nutmeg, optionalMethod:1) Break the cauliflower into fairly large florets. Steam until tender.2) Mash with a few spoonfuls of butter, not too smoothly for more texture; or whisk, adding a little cream, until very smooth.3) Season, add a pinch of nutmeg, if using, and serve.
