Fans of sushi will love that this sophisticated starter is made with raw salmon (although you can used the smoked variety if you prefer). It's the perfect choice to kick-off an elegant lunch or dinner party
Serves: 4
Difficulty: Easy, 30 minutes plus chilling time
Ingredients:
2 ripe and ready avocados
Juice of 1 lemon
3 spring onions, finely chopped
1 cucumber, peeled, seeded and finely chopped
Salt and freshly ground black pepper
10ml (2 tsp) green Tabasco sauce
400g raw fresh salmon (or 250g smoked salmon), finely chopped
30ml (2 tbsp) chopped fresh dill
Microgreens, to serve (find out how to grow your own)
Method:
1) Mash the avocados in a bowl and mix in the lemon juice, spring onions and cucumber. Season generously and add the Tabasco.
2) In a separate bowl, mix the salmon with the dill and season well.
4) Place 4 ring moulds on serving plates, spoon of the avocado mixture into the moulds and press down gently with the back of a teaspoon. Spoon the salmon mixture over the top and smooth down evenly. Top with remaining avocado mixture. Cover and chill until ready to serve.
5) To serve, gently lift off the moulds, top with microgreens and serve with melba toast.
