Honey-roasted nectarines with vanilla yoghurt

For a simple-to-make yet sophisticated pudding, serve up these honey-roasted nectarines stuffed with a ginger biscuit crumble. This budget-friendly dish would also make a delightful addition to any brunch menu

Serves: 4

Difficulty: Easy, 1 hour

Ingredients:

6 ripe nectarines, halved and pitted

8 ginger biscuits, crushed

45ml (3 tbsp) honey, plus extra to serve

2.5ml (½ tsp) vanilla extract or vanilla paste

125ml (½ cup) double-cream yoghurt

Method:

1) Preheat the oven to 180°C.

2) Place the nectarines cut side up in an ovenproof dish. Fill each cavity with the crushed ginger biscuits and drizzle with honey. Bake for 30 minutes. Remove from oven and cool for 10 minutes.

3) Mix the vanilla with the yoghurt.

4) Serve the nectarines topped with a dollop of yoghurt and drizzled with extra honey.
