RECIPE: Multi-decker rainbow sarmie

Packed with a tasty mix of cheese, cold meat and veggies, this gourmet sandwich is guaranteed to put a smile on your face when you open your lunchbox at work

Serves: 4

Ingredients:

6 slices fresh white or brown bread

30ml (2 tbsp) tomato passata

8 cherry tomatoes, sliced

Salt and pepper, to taste

Butter, as needed

30ml (2 tbsp) hummus

1 carrot, peeled and finely sliced

4-6 slices mozzarella cheese

4-6 slices marinated yellow pepper

30ml (2 tbsp) cream cheese

30ml (2 tbsp) pesto

A cucumber, peeled and sliced into ribbons

1 small red onion, finely sliced

1 baby red cabbage, shredded

30ml (2 tbsp) mayonnaise

2.5ml (half tsp) wholegrain mustard

2 slices black forest ham, or other ham, or beef (optional)

Method:

1. Place 1 slice of bread on a board. Spread with tomato passata, top with sliced cherry tomatoes and season.

2. Butter the next slice of bread on one side and place butter-side-down on top of the tomatoes. Spread the other side with hummus and slices of carrot.

3. Top with another slice of bread, buttered on both sides. Top with sliced mozzarella and yellow pepper slices.

4. Butter another slice of bread on one side and place butter-side-down on top of the cheese. Spread the other side with cream cheese, pesto and cucumber ribbons.

5. Butter the next slice on both sides and place on top of the cucumber.

6. Mix the onion, cabbage, mayonnaise and mustard to make coleslaw and season to taste. Pack coleslaw on the sandwich, then slices of ham or beef, if using meat.

7. Butter the last slice of bread on one side and place on top of the meat. Push 4 skewers through the sarmie, slice into 4 triangles and serve.
