Huevos rancheros (Mexican eggs)

This Mexican breakfast dish of fried eggs served on a warmed tortilla with spicy tomato salsa and avocado is delicious at any time of day

Serves: 4

Difficulty: Easy

Time: 50 minutes

Ingredients:

4 tortillas

1 chorizo sausage, chopped and fried

1 jar chunky, spicy salsa

1 avocado, peeled, mashed and seasoned

Grated cheddar cheese

4 extra-large eggs

Olive oil

Fronds of fresh coriander

Method:

1) In a dry, nonstick frying pan heat the tortillas on both sides then place on a board.

2) Combine chorizo and salsa.

3) Spread a third of each tortilla with salsa, add avocado and sprinkling of cheese.

4) Preheat a nonstick frying pan, add a little olive oil and fry eggs, sunny side up.

5) Place an egg over the salsa and avocado. Fold over sides of the tortilla, add coriander and serve.
