INGREDIENTS

225g flour

2 tsp (10ml) baking powder

Pinch of salt

tsp (2.5ml) paprika

50g butter, melted

1 cup (250ml) milk

2 eggs, lightly beaten

150g spinach, cooked and chopped

150g feta cheese, cubed

30g parmesan cheese, grated

METHOD

Preheat oven to 190C.

Lightly grease a muffin tray with a little butter.

Sieve flour, baking powder, salt and paprika into a bowl and set aside.

Mix together the butter, milk and eggs and fold into the flour mixture.

Stir in spinach, feta and parmesan and drop spoonfuls of mixture into the greased muffin tray.

Bake in oven for 20 to 25 minutes, or until muffins are well risen and golden brown.

Transfer muffins to a wire rack to cool completely before serving.

MAKES: 10 to 12 muffins
