Fish with a new twist to excite the palate.

METHOD

Whisk together flour, salt, baking powder, wasabi paste and beer.

Dust fish with a little flour, coat in batter and deep-fry for 8-10 minutes, or until golden and cooked through.

Place on kitchen towel to drain excess oil.

Serve with lemon wedges and a dash of sweet chilli sauce and chips or salad.

Another good idea

Flake leftover fish and toss through salad.

1 cups (375ml) flour, plus extra for dusting
1 tsp (5ml) salt
1 tsp (5ml) baking powder
1 tbsp (15ml) wasabi paste (adjust to taste)
1 (340ml) ice-cold beer or soda water
4 x 200g firm white sustainable fish fillets
