Biltong with a worcester sauce reduction

Biltong bagels give tradition a twist

On a bed of salad greens.

Ingredients:

  • 2 bagels
  • 15ml olive oil
  • 1 clove garlic, crushed
  • 2cm ginger, crushed
  • 10ml lemon zest plus extra for garnish
  • Handful baby salad greens
  • 100g sliced beef biltong
  • 125ml Worcester sauce
  • 10ml soya sauce
  • 40ml pure honey




Method:

Cut the bagels in quarters and then split each quarter in half.

Toast the pieces in the oven at 160C until golden brown.

Meanwhile, heat a saucepan and add the oil, garlic and ginger.

Fry for 30 seconds.

Add the lemon zest and Worcester sauce, and reduce on a high heat for five minutes.

Add the soya sauce and honey, and further reduce for another five minutes until the sauce has a syrupy consistency.

Spread the reduction on the pieces of toasted bagel, add a few salad greens and add a good pinch of biltong.

Garnish with lemon zest.

Serves: Four
