Sweet potato pizza
- 240g (2 cups) cake flour, plus extra +
- 10g (1 sachet) instant yeast +
- 5ml (1 tsp) sugar +
- 10ml (2 tsp) salt +
- 250ml (1 cup) lukewarm water +
- 30ml (2 tbsp) olive oil, plus extra for drizzling +
- 2 large sweet potatoes, sliced and parboiled+
- 1 red onion, finely sliced +
- handful black olives, pitted +
- salt and black pepper +
- olive oil +
- 4-5 fronds of fresh rosemary
For the pizza base, combine the flour, yeast, sugar and salt. In a separate bowl, combine the water and oil and mix gradually into the dry ingredients, adding enough extra flour to make a soft dough.
Knead for 5 minutes, cover, and set aside in a warm place for about 30 minutes.
Knock down the dough and roll out into a large circle.
Spread with sweet potato slices without overlapping.
Sprinkle over onion slices and olives. Season generously, drizzle over a little olive oil and sprinkle with fresh rosemary. Bake at 200ºC for 10 -15 minutes till golden brown and cooked through.
Serve immediately. Serves 2-4
