Grilled ostrich kebabs with juniper berry rub
Gin lovers will recognise the distinctive flavour juniper berries lend this simple spice rub, which pairs well with game meats

Serves: 4-6
Ingredients:
4 juniper berries
15ml (1 tbsp) black peppercorns
30ml (2 tbsp) coriander seeds
10ml (2 tsp) salt
500g ostrich steak
1 red onion, cut into blocks
1 red and 1 green pepper, cut into blocks
Olive oil
Method:
1) Soak 10 sosatie sticks in water.
2) In a pestle and mortar blend together the berries, peppercorns, coriander and salt.
3) Cut the ostrich steak into 3cm blocks.
4) Place the spice blend in a plastic bag and toss the ostrich cubes in the mix, shaking to coat.
5) Thread onto kebab sticks and alternate pieces of meat with blocks of onion, red and green pepper. Sprinkle lightly with olive oil and grill till golden brown, turning often.
