Grilled salmon with blueberry salsa

This fruity salsa turns a simple grilled fish dish into something special

Serves: 4

Ingredients:

4 salmon (or trout) fillets

Olive oil

Salt and pepper

Blueberry salsa

30ml (2 tbsp) finely chopped red onion

1 small green chilli, seeded and finely chopped

5ml (1 tsp) honey

15ml (1 tbsp) lemon juice

375ml (1 and a half cups) blueberries

30ml (2 tbsp) chopped fresh coriander

Salt and pepper to taste

Method:

1) Place the salmon fillets on a baking tray lined with foil and drizzle with olive oil. Season and cook under a hot grill for 8-10 minutes or until just cooked.

2) Combine the ingredients for the salsa and mix well.

3) Serve the salmon with the salsa spooned over.
