Difficulty: Easy

Ingredients:

200g pearl barley

750ml hot vegetable stock

1 medium broccoli, cut into florets

Finely grated zest and juice of two limes or 1 lemon

60ml (4 tbsp) olive oil or other oil of choice

Salt and freshly ground black pepper

1 clove of garlic, crushed

Pinch of sugar

4 firm red tomatoes, diced

Method:

1. Rinse the barley in a sieve and then cook in the boiling stock for 30 minutes. Drain, , saving 100ml of the stock, and cool.

2. Blanche the broccoli in boiling, salted water for a few minutes then drain.

3. Mix the lime zest and juice with remaining stock, oil, seasoning, garlic, sugar and seasoning.

4. Combine the barley and tomatoes then pour over the dressing and mix through.
