Chef Nti's lemongrass ginger beer.

Serves: 16

Ingredients:

4 litres water

150g lemongrass, chopped

250g fresh ginger, chopped

625g sugar

Juice and zest of 2 lemons

1 x 10g sachet yeast

1 ripe pineapple, peeled and cut into squares

Method:

  1. Bring 1l of water to the boil
  2. Add lemongrass, ginger and sugar and allow the sugar to dissolve.
  3. Add the rest of the water, lemon juice and zest, and cool before adding the yeast.
  4. Rest for 10-12 hours, strain the ginger beer and refrigerate.
  5. Add the fresh pineapple before serving cold with ice.

Cook's tip: Add fresh slices of ginger at the end for another dimension.
