Cracking good nut, seed & apricot brittle

Good and health snack for those times when you need to nibble on something.

INGREDIENTS

1 cups (340ml) sugar

cup (60ml) golden syrup

1 cup (250ml) water

100g Original roasted seeds

50g almonds, roughly chopped (or any other nut)

50g dried apricot, roughly chopped (or any other dried fruit)

METHOD

Place sugar, syrup and water into a saucepan and heat slowly until sugar has dissolved.

Bring to the boil and cook until a dark caramel colour, or until hard crack stage is reached. Test by dropping a little caramel into cold water. If it is ready, it will set hard and crack when broken.

Remove pot from heat and quickly stir in seeds, nuts and chopped apricot.

Pour into a 20cm square baking tin lined with greaseproof paper and allow to set.

Break into pieces when hard and store in an airtight container.
