Sesame chicken with pickle salad
Ingredients
Salad
1 tsp (5ml) caster sugar
cup (60ml) lime juice
2 Granny Smith apples, grated
6 radishes, grated
1-2 tbsp (15-30ml) chopped pickled ginger
cup (80ml) coriander leaves
Chicken
2 tbsp (30ml) hoisin sauce
Salt and milled pepper
3-4 country-reared chicken breast fillets
cup (180ml) sesame seeds
Mayo
cup (125ml) good quality mayonnaise
1-2 tbsp (15-30ml) wasabi paste
tsp (3ml) sesame oil
Method
Mix together lime juice and sugar. Toss apple, radish and ginger into mixture and allow to pickle for at least 30 minutes. Toss through coriander.
Brush chicken with hoisin sauce and season. Place sesame seeds in a shallow dish. Press chicken into seeds to coat evenly.
Heat a glug of oil over a medium heat and fry chicken until golden and cooked through. Cool. Slice chicken into strips
Mix together mayonnaise ingredients.
Serve small piles of salad topped with chicken and a dollop of mayonnaise.
