Awesome almond plum tart

Ingredients

  • 240g (2 cups) cake flour
  • 65g ( cup) sugar, plus extra for sprinkling
  • 5ml (1 tsp) baking powder
  • 125g butter, cut into blocks
  • 1 extra-large egg
  • 45ml (3 tbsp) iced water
  • 12 red plums, halved and pitted (you could use any colour plum but red is really striking)
  • 60g ( cup) flaked almonds
  • Icing sugar, for dusting

Method

Preheat the oven to 180C. Spray a medium-sized baking tray with cooking spray. Combine the flour, sugar and baking powder in the food processor. With the machine running, add the butter a couple of blocks at a time until the mixture has the texture of fine breadcrumbs. Combine the egg and iced water, add to the processor and mix to combine. The dough must be a little moist. If it is dry, add an extra tablespoon of iced water.

Tip onto a lightly floured surface and roll out to fit the base of the baking tray. Place the plum halves cut side down on the dough. Sprinkle with extra sugar and flaked almonds. Bake for 30-40 minutes until plums are softened and pastry is cooked.

Dust with icing sugar and serve with a dollop of cream.
