Baked jam roly poly

Make this simple pud decadent by adding custard and cream. Inngredients240g (2 cups) flour20ml (4 tsp) baking powderPinch of salt85g ( cup) butter1 extra-large egg80ml-100ml milk85ml ( cup) smooth apricot jam, lightly warmedSyrup125g sugar3ml ground ginger250ml (1 cup) waterCustard or cream to serveMethodSift the flour, baking powder and salt together. Rub in the butter till the mixture resembles breadcrumbs. Combine the egg and milk and add to the dried ingredients to form a dough. Roll out pastry into a large rectangle about 25cm-30cm and spread with the jam. Prepare a baking dish that is a snug fit by spraying with cooking spray. Roll uplike a Swiss roll and place into a pie dish.Make the syrup by dissolving the sugar and ginger in water in a small pan. Bring to the boil for 2-3 minutes and pour this hot syrup over the roll.Bake at 200C for 25-30 minutes. Slice and serve hot with custard or cream, or both. Another option is to cut the raw roly poly into 3cm slices and place in an ovenproof dish sprayed with cooking spray. Pour over the hot syrup and bake for 15-20 minutes. Serves 6...
