Mojito-marinated chicken

Create a delicious chicken dish by adding elements of Cuba's most famous cocktail, the mojito IngredientsMarinade3-4 garlic cloves, crushed1 onion, chopped85ml (cup) white rum85ml (cup) fresh lime juice10ml (2 tsp) salt15ml (1 tbsp) sugarGenerous grinding of black pepperLarge handful fresh mint leavesHandful fresh coriander, choppedOther ingredients1 chicken, portioned1 large red onion, sliced1 large white onion, slicedOlive oil3 limes, cut into quartersMethodCombine all the ingredients for the marinade in a food processor or blender and process till well mixed.Slash the thickest parts of the chicken portions with a sharp knife and place in a dish or plastic bag.Pour over the marinade and set aside for 30 minutes to 1hour.In a large, oven-proof dish, spread out the onion slices and drizzle over a little olive oil.Spread chicken portions over the onion and pour over the marinade.Tuck in the lime quarters and bake in a preheated oven at 190C for 45-60 minutes until chicken is cooked through and golden brown.Serve with new potatoes and a salad.
