Salty cracker tarts

If you thought Salticrax had to be served with cheese, think again Ingredients200g Salticrax or other crackers200g pecan nuts, roughly chopped3 extra-large egg whitesPinch of salt200g (1 cup) caster sugar5ml (1 tsp) vanilla essence250ml (1 cup) fresh cream, whipped50g dark chocolate, meltedMethodCrush the crackers in a food processor or in a plastic bag with a rolling pin. Add the pecan nuts. Beat the egg whites and salt till stiff, then beat in the caster sugar. Fold in the vanilla essence with the cracker and nut mixture.Spoon into one large baking tin or 6-8 individual ones (round, 8-10cm in diameter) and bake in a preheated oven at 180C until golden brown; about 15-20 minutes for individual tarts, about 25-30 minutes for a large one.Allow to cool completely, drizzle with melted chocolate and serve with whipped cream.
