Chocolate swirl meringues Ingredients3 extra-large egg whites200g (1 cup) caster sugar5ml (1 tsp) vanilla extract80g dark chocolate, meltedMethodWhisk the egg whites using an electric mixer until stiff peaks form. Gradually add the caster sugar, beating continuously until mixture is thick and glossy and sugar has dissolved. Beat in the vanilla, then gently swirl in the chocolate so that the mixture is streaky. Pipe or spoon meringues onto a baking tray lined with bake paper and bake in a preheated oven at 120C for about 30 minutes. Turn the oven off and leave the meringues in the oven for an hour to cool. Remove from oven and cool completely on a wire rack. Makes about 12-18, depending on size...
