Sweetcorn and bacon fritters

Sweetcorn and bacon fritters Ingredients15ml (1 tbsp) oil100g bacon or ham, finely choppedred pepper, seeded and finely chopped3 spring onions, finely sliced2 cups corn kernels (fresh, frozen or canned)30ml (2 tbsp) fresh coriander or parsley, finely chopped2 extra-large eggs, beatenSalt and pepper60g ( cup) cake flour2.5ml ( tsp) baking powderMilk, if necessaryExtra oil, for fryingMethodHeat oil in a pan and fry the bacon, red pepper and spring onions until softened. Transfer to a bowl and mix with the corn, coriander and eggs. Season to taste. Sift in flour and baking powder and mix until well combined. Add milk if mixture is too stiff.Heat about 1cm oil in non-stick frying pan, drop spoonfuls of fritter mixture into the hot oil and fry for 2-3 minutes on each side. Drain on paper towel and keep warm. Repeat for remaining mixture.Serve the fritters warm with Kassler chops or steak.Serves 4...
