Date and walnut loaf Ingredients250g dates, chopped5ml (1 tsp) bicarbonate of soda80ml butter200g (1 cup) sugar1 extra large egg300g (2.5 cups) cake flour5ml (1 tsp) baking powder5ml (1 tsp) vanilla essenceTopping:75ml (5 tbsp) sticky brown sugar30ml (2 tbsp) butter30ml (2 tbsp) fresh cream60g walnuts, choppedMethod:Pour 250ml (1 cup) of boiling water over the dates and add the bicarbonate of soda.Stir and set aside to cool. Cream butter and sugar together.Stir in the egg.Sift the flour and baking powder into the creamed mixture, add vanilla essence and date mixture, and mix through.Spoon into a greased or sprayed loaf pan and bake at 170ºC for 40-50 minutes.Cool in the pan for five minutes, then turn out on a rack. For the topping, combine the sugar, butter and cream in a small pan over medium heat and stir until butter has melted and sugar dissolved.Pour over cake and sprinkle with walnuts..
