Ginger citrus cordial Ingredients6 large oranges6 large naartjiesSugar, according to juice measure3cm piece ginger, peeled and finely slicedRind of 2 naartjies, finely slicedFresh mint, to garnishMethodSqueeze the juice from the oranges and naartjies, and strain into a measuring jug.Measure out an equal quantity of sugar to the amount of juice and place in a pot with the juice, ginger and naartjie rind.Simmer, uncovered, over low heat for 20 to 30 minutes until syrupy.Cool and serve with soda water, lots of ice and mint sprigs.Add a splash of vodka for a kick.Makes 6-10, depending on glasses...
