Shrimp and orange noodle salad

Refreshing and zesty noodle salad. INGREDIENTS200g vermicelli rice noodles12 cherry tomatoes, halved15ml (1 tbsp) fish sauce30ml (2 tbsp) lime juice15ml (1 tbsp) palm sugar or soft brown sugar1 large red chilli, seeded and sliced2 large oranges, peeled and segmentedEnglish cucumber, seeded and thinly sliced2 carrots, peeled and finely sliced4 spring onions, sliced400g cooked peeled shrimpsSalt and pepper, to tasteFresh mint and coriander, to serveMETHODPlace noodles in a bowl, cover with boiling water and leave to soak for 10 minutes until tender.Drain and rinse under cold running water, then set aside in a colander.In a small bowl, lightly squash the cherry tomatoes and stir in the fish sauce, lime juice, sugar and chilli. Add the noodles and remaining ingredients, season and toss. Serve topped with mint and coriander. Serves 6...
