Tropical muesli

Tropical muesliIngredients375ml (1 cup) mixed seeds and nuts (such as sunflower, pumpkin and sesame seeds, linseed, almonds, pecan nuts or walnuts)400g (4 cups) rolled oats130g (1 cup) bran80g (1 cup) toasted coconut flakes5ml (1 tsp) ground cinnamon60ml (4 tbsp) runny honey125ml ( cup) sunflower oil5ml (1 tsp) vanilla essence250ml (1 cup) mixed chopped tropical dried fruits, such as banana, kiwi, mango, papayaMethodPreheat oven to 170C. Combine seeds, nuts, oats, bran, coconut and cinnamon in a large mixing bowl. Place honey, oil and vanilla in a saucepan and heat gently, stirring to combine well. Pour over dry ingredients and mix through evenly with your hands. Spread over the bottom of a large roasting pan and bake for about 30 minutes, stirring every 10 minutes until pale and golden. Cool before mixing in the dried fruit. Store in an airtight container and serve with milk or yoghurt. Makes about two litres...
