The big c sarmieIngredients2 avocados, peeled and diced15ml (1 tbsp) lemon juice1-2 discs of feta cheese, crumbled45ml (3 tbsp) naartjie (or any citrus fruit) juice1 pickled jalapeño chilli, finely chopped15ml (1 tbsp) white vinegar15ml (1 tbsp) avocado or sunflower oilSalt and freshly ground black pepper, to taste6-8 slices wholewheat or seed breadFresh rocket or watercress2-3 naartjies, mandarins orClemenGold, peeled and thinly slicedMethodCombine the avocado, lemon juice and feta and mix gently. In a separate container, combine the citrus juice, jalapeño, vinegar, oil and seasoning. Mix well and pour over the avocado mixture. Butter the bread (optional) and arrange a layer of rocket or watercress on each slice. Top with the naartjie slices and spoon on the avocado mixture. Finish with more rocket or watercress. Makes 6-8 sandwiches, depending on how high you pile them...
