South Indian spiced baked kabeljou on cucumber and apple salad INGREDIENTS700g kabeljou fillets (farmed) or any firm white fish filletsSpice rub15ml (1 tbsp) coriander seeds, crushed15ml (1 tbsp) cumin seeds, crushed4 garlic cloves, finely chopped1 green chilli, finely chopped1 bunch fresh coriander, finely chopped3cm root ginger, peeled and grated1 large onion, grated2.5ml ( tsp) white pepper2.5ml ( tsp) salt15ml (1 tbsp) olive oilJuice of 1 lemonSalad2 apples, peeled and slicedcucumber, slicedJuice of 1 large lemon1 tomato, finely diced1 chilli, thinly slicedHandful fresh mint, chopped5ml (1 tsp) cumin seeds, toasted30ml (2 tbsp) olive oilSalt, to tasteMETHODPreheat the oven to 200ºC. Place the fish in a baking dish. In a bowl combine the spice rub ingredients and mix well. Smear the spice rub all over the fish.Bake for 20 minutes. Combine the salad ingredients in a bowl and toss to mix. Check for salt, sweet, heat and sour balance and adjust to taste.Serve the fish immediately with salad on the side. - Serves 4..
