Blueberry Gin lollies

Ingredients

Gin

bottle (about 600ml) gin

1 packet (100g) blueberries

Lollies

1 cup (250ml) sugar

1 cup (250ml) water

3 cups (750ml) tonic water

1 packet (100g) blueberries

Method

Rinse blueberries and pour them into gin. Seal and store in a cool dark place for two weeks (if you can wait that long), shaking occasionally.

Heat together sugar and water in a small saucepan until sugar dissolves. Remove and chill.

Mix sugar syrup with tonic water to taste. Add gin to taste.

Divide berries between ice lolly moulds and top up with liquid.

Freeze until solid.

Makes about 10 lollies
