Fruit mince pinwheels

Ingredients

1 roll (400g) frozen puff pastry

1 cup (250ml) fruit mince

2-3 tbsp (30-45ml) brandy (optional)

1 egg, beaten

Icing sugar, for serving

Method

Preheat the oven to 220C. Grease and line a large baking tray.

Mix the fruit mince and brandy.

Spread fruit mixture over unrolled pastry in a thin, even layer. Roll up pastry tightly.

Cut roll into slices each 2cm thick.

Place pinwheels on baking tray and brush with beaten egg.

Bake for 15-20 minutes, or until golden and puffed.

Allow to cool. Dust with icing sugar and serve.
