Chicken chorizo and chickpea bake Ingredients4 chicken breasts, skin onSalt and pepper1 chorizo sausage, sliced200g cherry tomatoes1 large green pepper, cored and cut into chunksOlive oil1 x 400g can chickpeas, drainedFinely grated rind and juice of 1 lemonHandful of fresh parsley, choppedMethodPreheat oven to 200C.Season chicken and place it with chorizo, cherry tomatoes and green pepper in a baking dish.Drizzle with olive oil and bake for 20 minutes.Turn the chicken, add the chickpeas and bake for a further 15-20 minutes.Add the lemon rind and juice and parsley, stir through and serve with a crusty French loaf and a salad.Serves 4...
