ROAST CHICKEN, BACON AND CHIVE SANDWICH

Ingredients
4 slices country-style loaf
1 cup baby butter lettuce leaves
4 slices streaky bacon, grilled
200g shredded roast chicken meat
2 tbsp (30ml) French-style mayonnaise
2 tsp (10ml) chopped chives
Zest of one lemon
Method
1. Place the butter lettuce, bacon and chicken on a slice of bread.
2. Mix together the mayonnaise, chives and zest.
3. Spread the mayonnaise on the chicken and sandwich together.
PASTRAMI AND TOMATO SANDWICH
Makes: 2
Ingredients:
4 slices of country-style loaf
Butter for spreading
2 slices pastrami
2 gherkins, sliced
4 slices tomato
1 cup shredded iceberg lettuce
1 tbsp (15ml) Maille dijonnaise
Method
1. Butter the bread.
2. Place the iceberg lettuce, tomato, gherkin and pastrami on a buttered slice of bread.
3. Spread the dijonnaise on the pastrami and sandwich together.
