Green bean bredie Ingredients30ml (2 tbsp) oil1kg mutton (or lamb rib or flank) cut into pieces1 large onion, sliced250ml (1 cup) warm water500g green beans, cut into 4cm lengths2 large tomatoes, peeled and sliced6 peppercorns4 potatoes, peeled and cut into quartersSalt and pepper15ml (1 tbsp) butter15ml (1 tbsp) flourMethodHeat the oil in a large pan and brown the meat. Set aside.Fry the onion till soft and return the meat to the pan.Add the water, cover and stew for 2 hours until tender.After an hour add the beans, tomatoes, peppercorns, potatoes and seasoning.Blend the butter and flour together and use to thicken the bredie.Serve with rice.Serves 4-6...
