How to make: Spaghetti with artichoke hearts, parmesan and basil

Serves 4

Ingredients:

500g spaghetti

1 large jar prepared artichoke hearts, drained and roughly chopped

Zest and juice of 1 small lemon

60g parmesan cheese, shaved

Handful fresh basil, chopped

60ml (4 tbsp) olive oil

Salt and freshly ground black pepper

Method:

Cook the pasta according to packet instructions. Drain, retaining 30ml (2 tbsp) of the cooking water. Set pasta aside. In a bowl, combine the reserved cooking water with the artichokes, lemon zest and juice, parmesan, basil and oil. Season, toss with the pasta and serve immediately.
