Raw nut brownies
Ingredients
- Free of flour, sugar and eggs, these brownies don't even require an oven
- 200g (2 cups) whole walnuts
- 100g (1 cup) raw cacao powder
- Pinch of salt
- 625ml (2 cups) pitted dates
- 150g (1 cup) raw unsalted almonds, roughly chopped
Method
Place the walnuts in a food processor and blend until finely ground.
Add the cacao and salt and pulse to combine.
Add the dates one at a time through the feed tube of the food processor while the machine is running.
You should end up with a mixture the texture of cake crumbs that sticks when pressed together. If not sticky enough, add more dates.
Combine the walnut mixture with the chopped almonds and press into a square pan lined with greaseproof paper.
Place in the fridge or freezer until well chilled and easy to cut.
Slice and store in an airtight container.
