Raspberry blondies

The white chocolate version of classic brownie, these bakes are irresistible!

Raspberry blondies Ingredients300g white chocolate250g butter400g (2 cups) caster sugar5ml (1 tsp) vanilla extract4 extra-large eggs190g cake flour, sifted200g raspberriesIcing sugar, for dustingMethodCombine chocolate, butter and caster sugar in a saucepan and stir over medium heat until melted.Remove from heat and cool slightly.Add vanilla and beat in the eggs one at a time.Fold in the flour and raspberries.Lightly grease or spray and line a 20 x 30cm baking pan.Gently spread the mixture into the pan and bake in a preheated oven at 180C for 30 minutes.Remove from the oven and cool in the pan for 10 minutes, then slice into squares and turn out onto a wire rack to cool.Serve dusted with icing sugar.
