Coconut and banana fritters Ingredients140g (1 cup) self-raising flour2 extra-large eggsSalt and freshly ground black pepper125ml ( cup) sparkling or soda water125ml ( cup) desiccated coconut or lightly crushed coconut flakes, lightly toasted1 large ripe banana, peeled and mashed60ml (4 tbsp) fresh, chopped coriander30ml (2 tbsp) sweet chilli sauceOil, for fryingmethodMix the flour, eggs, salt, pepper and soda water to a smooth batter.Mix all other ingredients except the oil and mix through gently then allow to stand for 10 minutes before cooking.Preheat about 2cm-3cm of oil in a large frying pan.Drop spoonfuls of batter into the pan and cook till golden brown on both sides.For a cocktail snack, fry teaspoonfuls.
